Valentine’s mood without the stress — and without overcomplicating things.
This vegan chocolate treat is made with just 3 ingredients, requires no baking, and has a rich chocolate texture with natural sweetness from dates.
If you didn’t get the “gift” in time… this might just be the next best thing 😉
Time
About 30 minutes total (including freezing time)
Servings
1 mold (8–10 pieces, depending on how you slice it)
Ingredients
- 200 g raw hazelnuts
- 10–15 Medjool dates (pitted)
- 3 chocolate bars (125 g each) — 2 for the base, 1 for the final layer
Instructions
1) Chocolate & hazelnut base
Spread the raw hazelnuts evenly at the bottom of a silicone mold. If you prefer a slightly softer texture, you can roughly chop them in a food processor first.
Melt 2 of the 3 chocolate bars using a double boiler (bain-marie) and pour the melted chocolate over the hazelnuts, making sure they’re fully covered.
Place the mold in the freezer until the chocolate sets.
2) Date layer
Blend the dates in a food processor until you get a smooth, caramel-like paste.
Carefully spread the date paste over the frozen chocolate layer and gently press it down to create an even surface.
3) Final chocolate layer
Melt the third chocolate bar and pour it over the date layer.
Return the mold to the freezer until completely set.
Unmold and slice into pieces.
Tips
- You can lightly roast the hazelnuts beforehand to enhance their flavor.
- Any shape works — just make sure you use a silicone mold for easy removal.
- For clean slices, let the dessert sit at room temperature for a few minutes before cutting.
Storage
Keep it in the refrigerator or freezer. If frozen, let it rest a few minutes at room temperature before serving.
